Chewy Chocolate Chunk Cookie Recipe.

Hands down the best chocolate chip cookie I’ve ever baked!  The extra egg yolk and brown sugar made them really moist.  Shaping the dough taller than wide made for an amazingly thick cookie!  I’m in love, this cookie turned out better than any you could even buy.

Almost sinful Oreo Ice Cream Cake
1 package Oreo cookies
2 Tablespoons butter, melted (If you want a really firm crust, you’ll want to use more like 6-8 Tablespoons.)
1 (1/2 gallon) container of vanilla or chocolate ice cream, softened
1/2 bottle of chocolate syrup (about 1/2 to 3/4 cup)
2 (8 oz.) containers whipped topping, softened
Crush the Oreos into crumbs by running them through your food processor or putting them in a ziptop bag and crushing them with a rolling pin. Reserve 1/2 cup of the crushed Oreos for later.
In a mixing bowl, add the melted butter to the remaining crushed Oreos and stir. Spread the Oreo/butter mixture into a greased 9″ x 13″ pan, pressing firmly to form a crust on the bottom of the pan.
Spoon softened ice cream onto the Oreo crust. Spread evenly.
Drizzle chocolate syrup in a thin layer over the ice cream. Spread softened whipped topping on top of the chocolate syrup. Sprinkle reserved Oreo crumbles on the whipped topping.
Freeze for at least 4-5 hours, or overnight (for best results). Remove from the freezer about 10-15 minutes before serving to thaw slightly.
Serves 10-12.

Thai Namtip food review.

Now that we’ve bought a home on the other side of town, we have to find new places to eat close to home.  One thing the east side of Cinci has on lock is Thai food.  The west side, not so much.  My friend told me great things about this place, so I was excited to try it out.  I ordered the jasmine tea even though it was about 75 degrees outside.  I didn’t regret it, it was so very flavorful.  Had me looking for some in the store later!  I started out with a spicy shrimp roll to eat, that was fresh and simple and delicious.  It had just enough heat to be interesting without being overpowering. 

Next up was the Shrimp Pad See Ewe.  I love pad thai, but asked the waitress what was good and she recommended this, saying it was similar but juicier.  She was exactly right.  It had a wider noodle, that was stir-fried with carrots, corn & broccoli.  Kind of like pad Thai w/ more veggies which I loved.  The shrimp was huge & cooked perfectly!  They added eggs to it, which wasn’t in the description and I didn’t quite understand, but it was still good.  I did miss the peanuts, though and it was a little less seasoned then pad thai.  As I ate, I wondered how I would feel if I ate this before ever trying every pad thai, since I KEPT comparing them with every bite!  

I love how carefully made & fresh each dish was.  Looking forward to trying more great meals here!

So eating this very meal is one of the few things I look forward on my business trips to St Louis.  New York strip w/ mashed potatoes, sautéed green beans topped with crispy onion straws.  I have never actually sat in the restaurant.  When I’m staying at the Chase, I prefer to take it to go & veg out in my room.  Please don’t judge, my days are really long.  I digress.  The staff is always amazing and the food is always cooked perfectly and consistent.  I appreciate the sense of care they put into it. 
A small piece of comfort in the midst of the turmoil is just what the architect ordered.

I digress.  The staff is always amazing and the food is always cooked perfectly and consistent.  I appreciate the sense of care they put into it.

This cupcake was almost too delicious to handle.  I live for red Velvet cupcakes and this one put so many others to shame.  My only regret is waiting so long to try a place so close!  The cream cheese icing provided the perfect compliment to the sweet, light & fluffy cake.  Spot on!

Pappadeaux Seafood kitchen food review.

Headed out for a night with my family that was in town and was delighted to be eating seafood.  I ordered one of the chef’s selections and the portion was huge.  It was spicy without being overpowering.  There was easily 15 of us and our wait was probably over an hour even though it was a Tuesday and they weren’t that busy.  To appease us they brought out three dessert tray full of amazing delectables!  Of course all was forgiven and we had an amazing time sampling everything.  By far my favorite dessert was the chocolate cake.  It was so rich and creamy.  Very classy move from the Chef!

New recipe: cream cheese chicken.  Paired with roasted green beans.

I used thighs, added fresh thyme & did panko crumbs instead of corn flakes then cooked it about 10 min extra at 400 to finish.  

For the green beans, I seasoned with seasoning salt, garlic & onion powder & pepper then drizzled with worcestershire & Olive oil.  Baked along side the chicken at 350 for about 20 min.  
I’ve been trying to make them like the ones at the steak house at the Chase in STL, finally got it!
