Tried making a pineapple upside down cake in my cast iron skillet. I was intrigued by this method & all was well till it was time to flip… The pan was heavier than I realized, so I ended up throwing the pineapples everywhere, lol! Interesting concept, but I’ll stick to my tried and true 9x13 glass pan from now on!
1st from the freezer meal: marinated pork chops, twice baked potatoes & (fresh) asparagus. The pork chops turned out great, I didn’t love the marinade so I whipped up a Dijon sauce to simmer them in. The potatoes were ok, I prob should have cooked them a bit longer. Good meal thou! #whatbriscooking #makeDinner #experimenting with #freezermeals
Made the chicken & rice 2 days ago and I swear it tastes just as good today! The rice comes out creamy like a risotto. Here’s the recipe:
Preheat oven to 375. In a 9x13 in pan, Mix
10 oz can of cream of chicken
1 cup of rice
1 tsp of garlic (minced)
1 1/3 cup water
Cajun seasoning, salt & pepper, paprika (to taste)
Season a cut up chicken (I used the legs, thighs & wings) liberally and place on top of rice mixture. Cover w/ foil & Bake for 45 minutes or until chicken juices run clear. Pair with something green & Dinner is served!
